Tart & Cherry Chia Pudding

Ingredients

  • 1 cup (150g) tart cherries, frozen
  • 1 cup (120ml) coconut milk
  • 1/4 cup (30g) of chia seeds
  • 1/4 cup (60ml) tart cherry juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon

Optional Garnishes

  • Tart dried cherries
  • Dark chocolate chips or cacao nibs (certified gluten-free if necessary)

Directions

In a small bowl, combine the chia seeds, cherry juice, and coconut milk. Stir well, then let the mixture soak for at least 30 minutes, or until the chia seeds have absorbed most of the liquid and formed a thick gel.

Transfer the soaked chia mixture to a food processor or high-speed blender. Add the remaining ingredients and blend until smooth and creamy.

Spoon the pudding into serving bowls, glasses, or cups. Garnish with chocolate chips and additional tart cherries—fresh, frozen, or dried—as desired.

Enjoy immediately, or chill before serving for a firmer texture.
